Kale fritters

Can't believe how long it's been since our last post!!
As you can imagine, my preschooler is no longer one and we have added another human to the mix! Hahaha lots change in a few years...
Anyway...

Now we have a little veggie patch and we proudly post this recipe that was proudly made with our own kale :)
It was so tasty! Maybe because from ground to plate was so fast! Here it is..

KALE FRITTERS

INGREDIENTS:
Two handfuls of Kale
1 spring onion
2 fresh corn, grains cut (or a can will do as well)
5 eggs
salt, pepper and spices
Oil for frying

To serve:
2 tomatoes
A handful of parsley
Salt, pepper and lemon juice
Yoghurt

WHAT TO DO:

1. In a food processor chop the kale and spring onion (not too fine)

2. Mix that with the corn and eggs and then add the spices

3. Heat up the oil of your choice and fry the fritters until golden from both sides. Take out of the pan unto a paper towel.
4. While the fritters are cooking chop up the parsley and tomatoes and add the salt, pepper and lemon juice.
5. When ready to serve just top with some of the salad and yoghurt if desired.

Banana Pancakes

My little man loves pancakes with peanut butter so we have tried different recipes and this one is great, the pancakes are moist and we don't have to add butter to the batter. It also just makes about 6 pancakes so that is more than enough for us.

INGREDIENTS:

1/2 cup flour
1/2 cup milk
2 tsp baking powder
1 ripe banana
1 egg

1. Add all ingredients to the blender and mix until thoroughly combined.
2. Heat a pan and add a bit of butter every time you're about to cook a new pancake.
3. Cook the first side until you can see holes through the batter and then turn for less time on the second side.
4. Serve with anything from jam to peanut butter or honey or fresh fruit. Possibilities are great!

Oatmeal (porridge) for breakfast

This is one thing Faizi and I make quite often for breakfast. It is easy, delicious and nutritious!

INGREDIENTS:
1.5 cups of milk or water
1/2 cup of oats (any kind will do)
Cinnamon (optional)
Honey, maple syrup or sugar to sweeten.
Fruits and nuts (optional)

Pour about 1.5 cups of milk or water in a saucepan and add 1/3 of the oats. The more oats you add, the thicker it will be but remember that while cooking it may look runny, as it cools down it starts becoming thicker. Bring to boil and add the remaining oats if you want; reduce heat to minimum. Simmer for a few minutes and remove from heat.
Serve and add whatever you want to it: cinnamon, sweeteners, fruits and nuts :)

We added sliced banana and maple syrup to ours!
